Vinification:
It is removed the stalk
from the grapes, then maceration takes place at a temperature
of 20° C, after 12 hours they are softly pressed and then
in order to become limpid a natural settling of the must takes
place and selected leavens are added and it ferments at a controlled
temperature of 20° C.
Wine
refining:
Once alcoholic fermentation
is over, wine is stored during three months in order to become
limpid naturally, then wine is trasferred in durmast barrels
of lt. 225 (barrique) where remains for 90-100 days. After staying
in these barrels wine is filtered, refrigerated and bottled
in cold. |

Organoleptic
test:
Straw-coloured, intensive and persistent bouquet,
pleasant vanilla scent, plenty and fresh flavour, well balanced.

Gastronomical coupling:
Suitable for
sea-food, hors d'oeuvre, light "risotti" and like and aperitif.
