di San Giuseppe, Fracagnano, Maruggio, Sava, Avetrana and
in the isles in the province of Taranto situated in Fragagnano
and Lizzano. Province of Brindisi: in the territories of Erchie,
Oria and Terra S. Susanna.

Vineyards' average age:
35 years.

Soil features:
Clayey and sandy.

Plant breeding method:
Apulian sapling.

Grape varieties:
Primitivo.

N. of stools per hectare:
5.500.

Grape yeld per hectare:
8.000 kg.

Wine yeld per 100 kg of grape:
65 Litres.

Vintage time:
Beginning of September.

Vinification:
This old vineyard needs
appropriate care right in the vinification phase, in fact
during the maceration in order to make express its type features
it needs to be periodically aired and to have its temperature
under control. Once maceration is finished the must-wine is
separated from marcs and finishes its fermentation in stainless
steel tanks.
Wine refining:
Once fermentation is finished,
wine is separated from its sediments and kept in stainless
steel tanks for the first year (it is periodically transfered).
Then it completes its ageing phase in hl 55 durmast barrels.
Finally it is stabilized, filtered and bottled in cold.
