Murgia hills, situated in North Locorotondo.

15 years.

Soil features:
Clayey and calcareous soil, situated in middle of the hill.

Plant breeding method:
Awning and espalier.

Grape varieties:
Aglianico, Troia and Cabernet Savignon grapes.

N. of stools per hectare:
3.500.

Grape yeld per hectare:
14.000 Kg.

Wine yeld per 100 kg of grape:
70 litres.

Vintage time:
From the 20th to 30th of October.

Vinification:
Classical red vinification, prolonging the time of contact between marcs and must to allow a bigger extraction of colouring, aromatic and tannic essences in order to prepare wine to be aged. Then the marc is separated from the liquid part (must-wine). The drawing of wine is produced in stainless tanks in order to complete fermentation process.

Wine refining:
Once fermentation process is over, wine is separated the sediments and settles in stainless tanks for the first year, then in order to finish its maturing-process, the wine is settled in durmast barrels from Slovenia. At last wine is stabilized, filtered and bottled in cold.

Organoleptic test:
Ruby red coloured with orange tints, with a clear finish and vinous fragrance, dry, savoury, soft, harmonic and moderately tannic taste; remarkable for its strong structure and refined fruit.

Gastronomical coupling:
Suitable for roast meat, ground-game and matured cheese. Serve at room temperature.
