Vinification:
It is removed the stalk
from the grapes, the same ones are macerated at 10° C for
12 hours (cryomaceration). This technology is used in order
to obtain a greater quantity of aromatic essences, contained
most in the peel. Then they are gently pressed (pneumatic-press)
and the must obtained is filtered and cooled at -1° C.
Wine refining:
In
this technique to obtain the froth, unlike of Charmat and Classical
methods where it starts from a dry wine, the froth is obtained
from the must without sugar additive. Once
the must is cooled, after a brief time, temperature goes up
again in order to start fermentation. Once the fermentation
is started the wine is transfered into hermetic tanks. Once
pressure (5 bar) and sugar content are obtained, fermentation
is stopped by the fall of temperature (-4° C) and the filtration;
after about 3 months from the beginning of the processing wine
is filtered through sterilizating filters and it is bottled
in cold.

Organoleptic
test:
This special kind of sparkling wine has own personality,
clearly different from the other products; their organoleptic features
make it very special because of this refined fragrance together with the
marked sweetness and its low alcoholic content.

Gastronomical coupling:
Suitable
with desserts, excellent as cocktail-based.
