Vinification:
50% of grapes are vinified
throught the white vinification process and the rest 50% throught
a brief maceration of 12 hours, after that with a soft pressing,
marcs and must are separated. Then selected leavens are added
to the must and fermentation takes place a controlled temperature
of 20° C. The alcoholic fermentation, in these conditions,
lasts for 10-15 days.
Wine
refining:
Once fermentation is over
wine is separated from sediments and stored in stainless tanks
a temperature of 10° C for about three months. First of
bottling process in cold, wine is stabilized throught tartaric
refrigeration (-5° C per 10 gl.) and filtered using sterilising
filters. |

Organoleptic
test:
Rosè coloured, typical, with light violet tints,
fragrant and fruity bouquet, delicate, fresh and lightly acid taste.

Gastronomical coupling:
Optimal with
every meal, with hors d'oeuvres and soups and also with soft cheeses.
