Vintage time:

Vinification:
Grapes are softly pressed,
after making them limpid in a natural way, some selected leavens
are added ant the fermentation at a controlled temperatur (20°
C) takes place.
Wine refining:
Once
the wine is obtained and cleaned from the fermentation process,
it settles for about 3 months in stainless tanks. After that
wine is transfered in hermetic tanks (autoclave) where concentrate
rectified must and some selected leavens are added. Once the
fermentation is started autoclave's exhust valve is closed in
order to keep CO2 in the wine, this CO2 is obtained from the
same fermentation.
Once sugar content and pressure (5 atm)
are obtained, fermentation is stopped through a filtration and
the fall of temperature to -4° C; at this temperature it
remains for about 3 months in order to obtain a greater catching
of froth. After that it is filtered and bottled in cold. This
technique is called Charmat Method.

Organoleptic
test:
Bright limpidity, white and crisp froth; fine and
persisten perlage, straw-coloured with greenish tints. Delicate fragrance,
right intensity and refined, crisp and clean flavour.

Gastronomical coupling:
Excellent
as aperitif, suitable with dessert, it is also available as cocktail based.
