Vinification:
Grapes are gently pressed
and the liquid becomes limpid in a natural way, then some selected
leavens are added and fermentation processing at a controlled
temperature (20° C) takes place.
Wine refining:
Once
the wine is obtained and cleaned from the fermentation process,
it settles for about three months in stainless tanks. After
that wine is transferred in hermetic tanks (autoclave) where
concentrate rectified must and some selected leavens are added.
Once the fermentation in started exhaust valve of the autoclave
is closed in order to keep CO2 which is produced from the same
fermentation, in the wine.Once
fermentation processing is over, temperature goes down to -4°
C, in this condition wine remains for about three months in
order to obtain a better catching of the froth. This technique
in order to sparkle the wine, is called: Charmat Method.

Organoleptic
test:
Bright limpidity, white and crisp froth; fine, close
and persistent perlage; straw coloured with greenish tints. Delicate fragrance,
with right intensity and refined, dry crisp and clean taste.

Gastronomical coupling:
It
is a sparkling wine suitable for meals, excellent with shell-fish based
hors d'oeuvres and crustacean, suitable an aperitif too.
