Vinification:
After a selected choice of the grapes and a control made to verify the right moment of maturation to start the vintage, vinification process takes place, following strictly all the estates of the white vinification.

Wine refining:
After vinification, wine is taken form the tanks and definitively bottled (tirage). Once in the bottles sugar (liqueur de tirage) and selected leavens (pied de cuve) are added, after one year marcs are brought to bottle's neck (remuage) and degorgement is held. Organoleptic test:
Bright straw-coloured with light golden tints, bright with white, lively and plentiful froth, persistent perlage. Delicate bouquet gentle with a right intensity, light scent of the crust of bread.

Gastronomical coupling:
It is a sparkling wine suitable for meals, excellent with shell-fish based hors d'oeuvres and crustacean, suitable an aperitif too.
