Vinification:
It is necessary a prolonged
time of contact between marcs and must to allow a bigger extraction
of colouring, tannic and aromatic essences. Once maceration
is over, the must-wine is separated from marcs and completes
its fermentation in tanks.
Wine refining:
Once
fermentation process is over, wine is separated from sediments
and settles in stainless tanks. After one year is stabilized
and bottled in cold.

Organoleptic
test:
Bright and garnet red coloured, intense bouquet with
a remarkable fragrance of ripe grape, its taste is dry but gentle, savoury
and harmonic.

Gastronomical coupling:
It is optimal
with roast white meat, also suitable with various kinds of cold meats and
salami and strong cheeses.
