Calcareous and clayey soil,
situated in a hill at 300-400 metres above sea level.

breeding method:
Apulian Sapling and low
espalier.

Grape varieties:
Verdeca 50%, Bianco d'Alessano
50%.

N. of stools per hectare:
About 5.500 plants.

Grape yeld per hectare:
10.000 Kg circa.

Wine yeld per 100 kg of grape:
60 litres.

Vintage time:
Ending of September and
beginning of October.

Vinification:
Grapes are softly pressed
(pneumo press), and a natural cleaning of the must takes place,
then some selected leavens are added and alcoholic fermentation
take place a controlled temperature of 14-15° C. In these
conditions fermentation process lasts about 15-20 days.
Wine refining:
After
alcoholic fermentation, wine is cleaned in a natural way and
then through a decanting method wine is separated from its sediments
to be kept in stainless tanks filled up with inert gas to avoid
a possible contact with would cause oxidation damages. After
about three months the wine is stabilized, filtered and bottled
cold.

Organoleptic
test:
Bright greenish coloured, lightly fruity, full and
intense bouquet, pleasant and dry taste, soft, great refinement and fragrance.

Gastronomical coupling:
Optimal as
aperitif and with horsd'oeuvre, vegetables, risotti and sea-food. Serve
chilly.
