Vinification:
Grapes are gently pressed
(white processing), must ferments at a controlled temperature
(18° C) for about 12-15 days. Then wine is transferred and
filtered, filled up with inert gas and kept in stainless tanks.
Wine refining:
After
about 3 months wine is stabilized and refrigerated (-4°
C for 10 days), filtered and bottled in cold.

Organoleptic
test:
Bright rose coloured, light, fine and fresh bouquet
of bitter orange, dry taste with a pleasant citrine vein, lightly fruity.

Gastronomical coupling:
It is better
to drink it soon in order to reap intact its delicate fragrance. It may
be served with every meal at a temperature of 8-10° C.
