Vinification:
Peel and must are in contact
for a prolonged period (maceration), in order to obtain more
colouring, tannic and aromatic essences. Once maceration is
over, the must-wine is separated from marcs and completes its
fermentation in barrels of 2,5 hl staying there for three months.

Wine
refining:
After the stocking period,
a part of the wine is placed in durmast barrels coming from
Slovenia, while the rest is placed in stainless tanks. After
two years wine is gathered again, stabilized and bottled in
cold. |

Organoleptic test:
Intense ruby red coloured,
ripe fruit bouquet with a light scent of spices, its taste is full, deep,
rightly tannic, gentle and harmonic.

Gastronomical coupling:
It
is optimal with red meat and hunting, it is also indicated with strong cheeses.
