C. In these conditions the fermentation lasts from 15 to 20
days.
Wine refining:
After alcoholic fermentation
the wine is settled and becomes limpid in a natural way, then
it is possible to divide it from the sediments throught a decant
method. Wine is stored in stainless tanks filled up with inert
gas in order to avoid possible contact with air that would cause
oxidation damages. After about three months wine is stabilized,
filtered and bottled cold.
