Vintage time:
End of September and during
the first ten days of October.

Vinification:
Soft pressing of the grapes
(pneumatic press), must cleaning by natural decanting, adding
of selected ferments, alcoholic fermentation at a controlled
temperature of 20° C.: in these conditions the fermentation
lasts 15 to 20 days.
Wine
refining:
After alcoholic fermentation
the wine remains still in order to have a natural cleaning,
afterwards is separated from dregs when transferred and then
kept in stainless steel tanks filled with inert gas in order
to avoid a possible contact with the air which would cause oxidation
damages. After about three months the wine is stabilized, filtered
and bottled cooled.

Organoleptic
test:
Straw colour with greenish tints, bright; smart and
pleasant fragrance, dry, fine and very harmonic taste.

Gastronomical coupling:
Optimal like
aperitif, suitable with hors d'oeuvre, vegetables, risotti and fish dishes.
Serve it cool.
