Wine refining:
Once the wine is obtained and cleaned from the fermentation process, it settles for about 3 months in stainless tanks. After that wine is transfered in hermetic tanks (autoclave) where concentrate rectified must and some selected leavens are added. Once the fermentation is started the exhaust valve of the autoclave is closed in order to keep CO2, which is obtained from the fermentation, in the wine. Once sugar content and pressure (2 atm) are obtained, fermentation is stopped through a filtration and the fall of temperature to -4° C; at this temperature it remains for about 1 month in order to obtain a greater catching of froth. After that it is filtered and bottled in cold.
