Vinification:
Novello wine is obtained
from the carbonic maceration of the entire grape, reaped in
cases of no more than 20 kg. each one. This cases are transported
in the winery where they are manually unloaded and placed in
an anaerobic ambient (without oxygen an filled with carbon dioxide).
In this conditions grapes remain for about 10 day, then they
are pressed and the must obtained completes the fermentation
at a controlled temperature. This technique allow to intensify
the fragrance of the matured grape
Wine
refining:
After the alcoholic fermentation,
wine is quickly stabilized, filtered and cooled, and after a
sterilizing process through filters it is bottled in cold. |

Organoleptic
test:
Red violaceous coloured, fruity, plenty, intensive
and persistent bouquet, tender, refreshing and soft taste.

Gastronomical coupling:
Suitable for
every food, it is pleasant to drink it in every moment. Serve at room temperature
and also chilled.
