Vinification:
Grapes are softly pressed
(pneumo pressing), then a natural cleaning of the must takes
place, after that some selected ferments are added and then
the alcohol fermentation takes place at a controlled temperature
of 20° C. In these conditions the fermentation lasts from
15 to 20 days.
Wine
refining:
After alcoholic fermentation
the wine is separated from its sediments, then is placed in
stainless steel tanks filled with inert gas in order to avoid
a possible contact with the air which would cause oxidation
damages. In these conditions the wine stays for four months
in order to allow the inert ferments kept in the wine to capture
body, volume and a greater aromatic character. Afterwards wine
is stabilized, filtered and bottled cold.

Organoleptic
test:
Straw colour with greenish tints, bright; smart fragrance,
pleasant, dry taste of great delicacy and harmony.

Gastronomical coupling:
Suitable with
lean hors d'oeuvre, vegetables, risotti and fish dishes. Serve it cool.
