Apulian sapling.

Verdeca 50%, Chardonnay
50%.

About 5.500 plants.

Grape yeld per hectare:
About 10.000 kg.

Wine yeld per 100 kg of grape:
60 litres.

Vintage time:
At the end of September
(Verdeca) and at the end of August (Chardonnay).

Vinification:
Grapes are softly pressed
(pneumatic press) then in order to become limpid a natural settling
of the must takes place, some selected leavens are added and
alcoholic fermentation is held at a controlled temperature of
20° C. In these conditions alcoholic fermentation lasts
for about 15-20 days.
Wine
refining:
After alcoholic fermentation,
the wine is settled and becomes limpid in a natural way, then
it is possible to divide the wine from the sediments throught
a decant method. Wine is store in stainless tanks filled up
with inert gas in order to avoid possible contact with air that
would cause oxidation damages. After about 3 mh, both wines
are gethered and then stabilized, filtered and bottled in cold. |

Organoleptic
test:
Bright greenish coloured, fruity, plenty and intensive
bouquet, pleasant, soft, crisp and refreshing taste, very refined and aromatic.

Gastronomical coupling:
Suitable for
light hors d'oeuvre, risotti, sea food and like aperitif. Serve chilled.
