The Communes of Locorotondo and Cisternino and a part of Commune of Fasano.

Vineyards' average age:
Form 10 to 25 years.

Soil features:
Calcareous and clayey soil, situated in a hill at 300-400 metres above sea level.

Plant breeding method:
Apulian Sapling and low espalier.

Grape varieties:
Verdeca 65%, Bianco d'Alessano 30%, Fiano 5%.

N. of stools per hectare:
About 8.500 plants.

Grape yeld per hectare:
10.000 Kg circa.

Wine yeld per 100 kg of grape:
60 litres.

Vintage time:
At the end of September and beginning of October.

Vinification:
Grapes are softly pressed (pneumo press), then in order to become limpid a natural settling of the must takes place, some selected leavens are added and alcoholic fermentation is held at a controlled temperature of 20° C. In these conditions fermentation process lasts about 15-20 days.

Wine refining:
After alcoholic fermentation, wine settles to become limpid in a natural way, so then it is possible to divide it from sediments through a decant method. Wine is stored in stainless tanks filled up with inert gas to avoid a possible contact with would cause oxidation damages. After about three months the wine is stabilized, filtered and bottled cold.

Organoleptic test:
Bright greenish coloured, with a lightly fruity fragrance, intensive and plenty pleasant, dry and soft taste, very refined and aromatic.

Gastronomical coupling:
Suitable with horsd'oeuvre, vegetables, risotti, sea-food and like aperitif. Serve chilled.
