Vinification:
This old vine requires very special attention during production. It must be aired regularly during fermentation and the temperature must be checked in order to achieve all the characteristics of this type of grapes. After the fermentation the wine is separated from the residue and the malolactic fermentation is completed in stainless steel tanks.

Wine refining:
Following the malolactic fermentation the wine is separated from the remaining yeast cultures and stored in stainless steel tanks for 6 – 7 months (it is regularly pumped in other tanks). Finally it is stabilised, filtered and bottled. Bottle refinement for 2 months.

Organoleptic test:
Deep red colour, balanced tannic acid, intensive bouquet similar to plum jelly, well balanced.

Gastronomical coupling:
Goes with roast meat, game, mature cheese. Serve at cellar temperature.
